WINEMAKING :A selection of the finest parcels from Château de l’Aumérade, harvested exclusively at night, with a short cold pre-fermentation skin maceration prior to pressing. Rigorous juice selection at pressing, followed by cold settling after clarification. Fermentations conducted at 14–17 °C to enhance aromatic development and encourage long, slow fermentations.
AGING: Ageing on fine lees with regular post-fermentation bâtonnage (approximately two months) to bring richness and complexity to the wines. Careful racking and filtration prior to blending, followed by preparation for bottling. Throughout the entire process, the wines are protected by nitrogen inerting to preserve aromatic expression and richness.

TASTING NOTES
On the eye, the cuvée displays a bright, clear colour of an elegant pale peach hue, enlivened by subtle blush-pink highlights. The initial nose is fresh and expressive, opening on aromas of fresh mandarin and pomelo, complemented by delicate notes of citrus zest. The overall impression offers a harmonious balance between fruit sweetness and lively acidity, immediately capturing attention with its finesse.
On the palate, the attack is elegant and subtle, carried by a fine freshness. Citrus and exotic fruit flavoursunfold delicately before evolving towards a fuller, more structured mid-palate. The texture gains weight and depth, revealing more concentrated notes of yellow-fleshed fruits—both zesty and generous—enhancing the wine’s aromatic complexity.
The finish stands out for its refined smoothness, punctuated by delicate confectionery notes reminiscent of marshmallow. Long and persistent, it unfolds with precision, supported by a pleasant saline bitterness that brings balance and lift to the overall expression.
