BELLEVOYE is designed to be the expression of what the French whisky industry does best. The list of the three distilleries which make up this blend is not fixed. It will always be from the three distilleries rated the best in a blind tasting of all French whiskies (around fifty) which we undertake before each production run (two batches annually).
Peat comes from the decomposition, by micro-organisms, over several thousand years, of plants such as moss, algae, and heather, in areas which are humid and low in oxygen.
Because of its high humidity content, peat, during its evolution develops smoky, fatty and ropy aromas: these allow the unripe malt, which has already been humidified, to develop.
This gives aromas of iodine, liquorice, log-fires, ash, and cloves.
The scale used to measure the quantity of peat present in the malt is the p.p.m. (parts per million) of phenol acids. The malt grains used for Bellevoye Black are about 45 p.p.m.
