Grape varieties: Corvina Veronese, Corvinone, Rondinella.
Casa Capitei is an entirely terraced estate of 5 hectares, located in Valpolicella. This is a wonderful hill with clay and marl soils, which express thoroughly the interdependence between the terroir and the autochthone grape varieties.
After a selected harvest, grapes are laid out on plateaux in the fruit room for the drying: this is our traditional “put to rest”. In the end of this drying process, grapes have lost from 35% to 40% of their weight and they have concentrated their juices and their sugar content.
Gentle crushing and destemming, slow fermentation with a long contact with skins to get more aromatic concentration, olfactory amplification and strengthening of the structure.
The wine is put in French oak barrels of 5hl to 20hl for 24/30 months.
Organoleptic description: Intense ruby red with garnet nuances, persistent fruity notes going from cherry under spirit to ripen plums and blackberries, fine spices and liquorice. Great body in the mouth.
